Spiral bound, 226 page book chock full of wonderful recipes which were shared over 17 years of tasting parties at the library.

and the rest are beverages, salads, meats, casseroles, vegetables, and specialties.

Apricot Bars

3/4 c. margarine

1 1/3 c. shredded coconut

1 c. sugar

½ c. walnuts, chopped

1 egg

½ tsp. vanilla

2 c. flour

1 (12 oz.) jar apricot preserves

1/4 tsp. baking powder

 

 

Preheat oven to 350 .  In large mixing bowl, cream margarine and sugar.  Add egg; mix well.  In separate bowl, combine flour and baking powder.  Gradually add to margarine mixture.  Add coconut, walnuts and vanilla; mix thoroughly.  Press 2/3 of dough in a greased 9x12x2-inch baking pan.  Spread with preserves; crumble remaining dough over preserves.  Bake for 30 to 35 minutes or until golden brown.  Cool in pan on wire rack.  Cut into squares.  Makes 36.

The Kinsley Library Endowment Foundation, Inc. was formed in 1992, primarily with funds bequeathed to the library by Vivian E. Elsbury, a retired teacher in the Offerle schools.

 

The purpose of the Foundation is to promote the Kinsley Library and its continued growth and improvement.  Contributions and gifts to the Foundation are used for the purchase of library materials, furniture, and equipment for the library.
